Food glorious food
I Love to cook, be it stove top or fire side. That being said there is something special about getting to the campsite and eating good wholesome food instead of tined or freeze dried. As an international outdoor professional, I like to bring the flavors of my travels to my clients and my new friends. Whenever I travel I try and pick up local cooking techniques, so far I have learned about:
-Tortillas 101 in Mexico (back home, and without a tortilla press, I do push-ups in order to flatten them).
-How to cook lamb and pumpkin in New Zealand, plus the legendary Pavlova.
-Curries, Dhal Bhat and the uses of Garam Masala in Nepal and India.
-Cooking fish and the art of Civiche in Ecuador and Peru
-Seafood, and seafood curry in Indonesia
As a multi day canoe trip guide, providing a variety of meals can be challenging. However, a large memory full of delicious recipes helps provide an enriching experience for my client’s pallet.

The Dutch Oven
The Dutch oven brings a certain 'je ne sais quoi' to any trip. Within the confines of the Dutch oven even the most basic meals such as baked beans or mack and cheese become rich and delicious. With the Dutch oven you can create baking masterpieces, whether it is day 5 or 35.
The trick with the Dutch oven is getting the heat just right. Too little and it will never cook, too much and you will end up with charcoal. The secret is steady low heat on the bottom, and evenly distributed medium heat on the top. |
Fishing and gathering
The world is full of tasty foods, many of which grow, walk or swim around us. I believe that respectfully taking from the land is important because it shows the indoctrinated where food comes from. It also tastes really good!
